Adding Nepalese flavor

POCATELLO -- Just a few weeks ago, Tara and Kesh Chhetri were living in Nepal, where Tara had worked in the hotel food and beverage industry, and Kesh was a mountain guide, who sometimes took clients to the base camp of Mount Everest. Now they're Pocatello residents, and they're giving a Nepalese flair to A Taste of India. The Chhetris were lured to the Gate City by their cousin, Sanju Choudhury, owner of Pocatello's only Indian food restaurant, Sanju's Dhaba: A Taste of India.
They're now running the Old Town eatery, with an option to buy it. Tara said she likes the Indian decor and food, but also plans to add some Nepalese dishes. "It's easy to serve people because it's not so big," Tara said of the restaurant.
Tara worked for 13 years in the food and beverage department at a four-star hotel in Nepal. She learned to cook Indian and Chinese food when she took a culinary class two and a half years ago.
She and her husband have retained the signature dishes at the restaurant here, but have also contributed some of their own favorites. They've added a salad bar, dessert, an Indian flat-bread called roti and Tandoori chicken to the lunch buffet.
They've also brought in a clay oven to provide an authentic method for cooking the dishes. Their 15-year-old daughter, Christina, has been helping at the restaurant. They also have an 8-year-old son, Sacar.
Tara said Nepalese food is very similar to Indian food and utilizes many of the same spices. For Sanju, it's been nice to have relatives in town.
"I'm just excited for them because they've got a lot of ideas. She's got a lot of experience," Sanju said. "She has a restaurant background, and her husband has a restaurant background."
